The Amarone della Valpolicella Risotto combines three local great gastronomic excellences :
Vialone Nano Veronese I.G.P rice, from the plains, with compact grains, perfect for creamy risottos.
Monte Veronese Dop cow’s milk cheese, originating from Lessinia, the Veronese mountains.
Amarone della Valpolicella DOCG, premium red wine obtained from the best Valpolicella dried grapes (appassimento tecnique) and long aged before bottling.

THE CAFFE MONTE BALDO's RECIPE
RISOTTO ALL'AMARONE WINE
We proudly announce that Caffè Monte Baldo's "Risotto all'Amarone" recipe it is recognized as geographical origin certification mark “Denominazione Comunale” De.Co by the Municipality of Verona. Our recipe, vegetarian and gluten-free, makes the most of the premium ingredients we used according to the principles of taste, flavor and food inclusivity of the dish. For this reasons, we only use vegetable broth and do not use sautés, onions or other preparations that are difficult to digest.
The dish has an intense purple colour, creamy texture on the palate but with still firm and compact grain of rice. Taste has to be well balanced between the acidity of the wine and the “soft” part given by the melted Monte Veronese cheese and mountain butter used in the rice creaming i.e “mantecatura” process. link
Be patient
It will take at least 15 minutes, to enjoy a good espresso risotto with Amarone della Valpolicella (not pre-cooked), necessary for the rice to be creamed correctly.

Caffè Monte Baldo began in 1909 a love story for its land and its food and wine traditions lasting over a century which allowed it to obtain the prestigious awards of “Typical restaurant” and “Historical shop” from the Municipality of Verona and Historic place in the Veneto region by the Region. Here you can enjoy a great aperitif with the famous tapas or with our selection of cold cuts and cheeses, obviously accompanied by an excellent glass of wine, or stop for lunch and dinner enjoying high quality cuisine with home-made raw materials and with attention for tasty gluten free and vegan alternatives.
The wine list is extensive and awarded with over 300 labels stored in our cellar and the great selection of Amarone della Valpolicella and local excellences.
